Lucky for us, we didn’t have to travel far to find our best source of eggs. Vanderpol’s Eggs is a Vancouver based, family owned and operated egg processing company that is as passionate about eggs as we are about ice cream.
They worked directly with us to ensure that we had the best quality egg yolks to use in our custard, and in the numerous visits to the plant we were consistently blown away by their commitment to innovation and better practices across the last 50 years.
Lori’s favourite part of the tours? The “ferris wheel” egg cracking machine. It’s hypnotizing in its efficiency and ability to crack 500 eggs per minute when on maximum speed.
